Pastinaca sativa
Sow: Spring and Summer, direct in ground
Harvest: Lift the roots when large enough and best after a frost as it improves the flavour, about 19 - 24 weeks
Uses: Roast with honey, Parsnip and Carrot soup with ginger
Notes: Parsnips are frost hardy. Parsnip seeds need to be fresh, no more then a year old.
